Ingredients

  • 24 x 113 g High Liner Foodservice Signature Cape Hake Fillets #5946, thawed
  • 250 mL soft sundried tomato halves (not soaked in oil)
  • 250 mL water
  • 125 mL olive oil
  • 5 mL dried basil
  • 3 garlic cloves

Method

  1. Place thawed Cape Hake fillets on parchment lined baking trays.
  2. Add remaining ingredients to a food processor and blend until smooth.
  3. Spread 1 tbsp (15 mL) of sundried tomato pesto on each fillet.
  4. Bake at 350°F/180°C for 7 to 10 minutes or until done.
  5. Serve with a medley of herb roasted sliced mini potatoes, zucchini and baby carrots.
