Surf & Surf - Baked Haddock Fillet with Lobster Crust

Ingredients

  • 8 x 210 g High Liner Foodservice Signature Haddock Fillets #1007, thawed
  • 2 shallots, finely chopped
  • 2 garlic cloves, minced
  • 15 mL butter
  • 2 mL paprika
  • salt and pepper, to taste
  • 60 mL mayonnaise
  • 15 mL lemon juice
  • 10 mL dijon mustard
  • 250 mL dried bread crumbs
  • 30 mL fresh parsley, chopped
  • 454 g High Liner Cooked Lobster Meat 3592, thawed, drained and claws chopped

Method

  1. Pat dry fillets and place on greased baking pan.
  2. In skillet, cook shallots and garlic in butter until softened; add; paprika, salt and pepper.
  3. In bowl, combine mayonnaise, lemon juice and mustard. Stir in shallot mixture, breadcrumbs, parsley and lobster meat.
  4. Spread lobster mixture evenly over haddock fillets.
  5. Bake at 220C 425F) for about 8 to 10 minutes or until fish is cooked.
