Deep Fried Mac & Cheese Fritters

Ingredients

  • 454 g High Liner Lobster Meat, Claw, Knuckle & Leg Meat #3592, thawed and chopped
  • 1 L 35% cream
  • 454 g dry macaroni pasta
  • 60 mL butter
  • 60 mL flour
  • 750 mL cheddar cheese, grated
  • 250 mL parmesan cheese, grated
  • Breading Station
  • 12 eggs, beaten
  • 500 mL flour
  • 950 mL panko bread crumbs

Method

  1. Cook pasta according to package directions, drain and cool.
  2. Combine flour and butter in a sauce pot to make a roux.
  3. Whisk in heated 35% cream, bring to a boil and strain.
  4. Whisk in cheddar and parmesan and keep warm.
  5. In a large bowl, combine cooked pasta with cheese sauce and chopped lobster meat. Mix to ensure even distribution of lobster and place on a baking sheet to cool.
  6. Once cooled, cut or roll into desired shape and then bread by dipping each portion in flour, egg wash and panko.
  7. Deep fry to order, however depending on the thickness you may need to heat in the oven after deep frying to warm the centre.
