Curried PEI Mussels

Ingredients

  • 1 kg High Liner Foodservice Signature Cooked Shell-on Mussels, PEI #1040688
  • 240 mL curry broth
  • 15 mL shallots, chopped
  • 5 mL garlic, minced
  • 15 mL fresh parsley, chopped
  • to taste salt and pepper
  • Slurry for thickening

Method

  1. In a sauté pan, bring curry broth, shallots and garlic to a boil.
  2. Add frozen mussels, cover with a lid and reduce heat to a light boil.
  3. Once mussels are heated through (approx. 5 min.), remove from the pan with a slotted spoon and place in your serving vessel.
  4. Add parsley to the curry broth and check for seasoning.
  5. Thicken with slurry and pour the thickened sauce over the mussels.
  6. Serve immediately.
