UpperCrust™ Everything Bagel Alaska Pollock with Citrus-Sumac Labneh & Za’atar Roasted Potatoes

The Everything Bagel UpperCrust™ Alaska Pollock gives you the freedom to play and create your own style with seafood. Traditionally, Za’atar spices are added to labneh, but here we have added them to the potatoes and opted for a more citrus-forward flavour for the labneh.

Ingredients

  • 8 UpperCrust™ Everything Bagel Alaska Pollock portions
  • 4lbs baby potatoes
  • 3 tbsp Za’atar dry spice mix
  • 1.5lbs green beans, trimmed and steamed
  • 1/2 cup labneh
  • 1 tbsp grated lemon zest
  • 1 tbsp ground sumac
  • 1 tbsp honey
  • 1/4 cup olive oil

Method

  1. Cook UpperCrust™ Everything Bagel Alaska Pollock according to box directions.
  2. Wash and slice baby potatoes in half. Place in a bowl with 3 tbsp of olive oil and toss until well coated.  Add Za’atar spice, salt and pepper to taste. Toss until potatoes are coated in spice.  Transfer potatoes to a sheet pan and oven roast until cooked. 
  3. In a bowl, combine labneh, lemon zest, sumac, honey and the remaining tablespoon of olive oil. Season with salt and pepper to taste. 
  4. Assemble the dish according to the recipe picture and garnish with blistered cherry tomatoes (optional).
