Smokey Applewood Salmon Frittata

We all know that the breakfast meal period is the most important meal of the day and as restaurant operators we’re always looking for ways to increase profits during this lucrative meal time. Seafood is often overlooked as a protein at breakfast due to its higher cost and difficulty to prepare. This Smokey Applewood Salmon recipe should help to change that. By using our Fire Roasters™ Smokey Applewood Salmon from frozen we were able to virtually eliminate waste. Due to its smoked flavour profile, you can sub it in for traditionally used cold smoked salmon at virtually half the cost!

Ingredients

  • 1 pc Fire Roasters™ Smokey Applewood Salmon #8955
  • 250 ml liquid eggs
  • 2 tbsp cream
  • 1 cup baby spinach
  • ½ cup diced red pepper
  • ½ cup diced green pepper
  • ¼ cup diced red onion
  • 1 tbsp extra virgin olive oil (EVOO)
  • salt & pepper to taste

Method

  1. In a 6” skillet heat EVOO over medium heat and sauté peppers and red onion until tender. Add in spinach right at the end to wilt. Transfer vegetables to 2 individual size ceramic baking dishes.
  2. With a cleaver or large chef knife slice salmon into 1/4 inch thick strips and arrange half of a portion into each baking dish.
  3. Slowly pour in 125 ml of seasoned liquid egg into each dish. Bake in 375°F convection oven for 12-15 mins.

Tips

Double the recipe size to a full 12” cast iron skillet and serve as wedges.
