Ingredients

  • 24 x 115 g High Liner Foodservice Pacific Salmon Loins SVP #8960, thawed
  • 1.5 L tomatoes, diced
  • 175 mL red onion, diced
  • 45 mL garlic, minced
  • 15 mL dried basil
  • 50 mL balsamic vinegar
  • 50 mL olive oil
  • 45 mL honey
  • to taste black pepper

Method

  1. Place Salmon Loins on a baking sheet lined with parchment paper.
  2. Combine remaining ingredients to make the bruschetta.
  3. Top each Salmon portion with bruschetta and bake @ 375°F (190°C) for 8-10 minutes or until done.
  4. Serve with steamed rapini and penne alfredo.
