Authentic ethnic sandwiches and hand-helds are hot these days. Here’s a little history: a po’ boy is a traditional sandwich from Louisiana with meat or fried seafood stuffed between a French style baguette with lettuce, tomato and creole mustard. The banh mi sandwich hails from Vietnam. It uses the same French style baguette and fills it with different proteins from tofu to duck. One thing that is always standard in a banh mi is pickled vegetables, like carrots and daikon. Fresh coriander is a must! Our Bam Bam Evercrisp™ Shrimp add an awesome crunchy texture to this sandwich.

Ingredients

  • 16 Bam Bam Evercrisp™ Lightly Battered Shrimp, #8750
  • 4 mini baguettes
  • ½ cup mayonnaise
  • 2 tbsp Sriracha sauce
  • ¾ cup shaved red cabbage
  • ¼ cup sweet chili sauce
  • 1 cup mixed pickled vegetables (carrots, cucumbers, onions, cauliflower)
  • 8 sprigs of fresh coriander

Method

  1. Deep fry High Liner Bam Bam Shrimp as per box directions.
  2. Combine mayo and Sriracha sauce.
  3. Toss cooked Bam Bam shrimp with sweet chili sauce.
  4. Slice baguettes in half and fill with Sriracha mayo, shaved red cabbage, pickled vegetables and top with Bam Bam shrimp and fresh coriander.
