Buffalo Shrimp Fajitas

Ingredients

  • 10 Buffalo Shrimp – frozen
  • 5 small flour tortillas
  • ¼ cup bell peppers – julienne
  • ¼ cup white onions – julienne
  • 1 tbsp chopped coriander
  • ½ tsp ground cumin
  • ½ tsp smoked paprika
  • 1 tbsp vegetable oil

Method

  1. Cook buffalo shrimp according to box directions
  2. Sauté peppers and onions with veg oil, cumin, paprika and coriander.  Season to taste
  3. Place sautéed vegetables on a skillet and top with cooked buffalo shrimp
  4. Serve with warm tortillas, and sides of sour cream, shredded cheese and salsa.
