Buffalo Shrimp Lettuce Wraps

Ingredients

  • 36 pieces of buffalo shrimp – frozen
  • 12 romaine hearts
  • 1 ¼ cup diced tomatoes
  • 1 ¼ cup diced white onion
  • 1 ¼ cup sweet corn kernels
  • ½ cup cilantro leaves chopped
  • 1 tbsp fresh lime juice
  • 1 jalapeno – seeded and minced
  • 2 tbsp quality olive oil (optional)
  • ¼ cup crumbled Mexican cheese
  • Salt pepper to taste

Method

  1. Cook buffalo shrimp according to box directions
  2. Combine tomatoes, onions, corn, cilantro, lime juice, jalapeno, olive oil and season
  3. Assemble lettuce wraps by filling each romaine heart with sweet corn pico, crumbled cheese,cooked buffalo shrimp and serve
