Ingredients

  • Upper Crust™ Caribbean Crusted Basa with Sweet Potato & Jerk Spice (product #1029)
  • 118 ml coconut rice, cooked
  • 30 ml red kidney beans
  • Salad
  • 237 ml ripe mango, diced
  • 237 ml papaya, diced
  • 30 ml cilantro, chopped
  • juice of 1 lime

Method

1) Cook fish according to package directions.

2) For the salsa, mix mango, papaya, cilantro and lime juice.

3) Serve Basa over coconut rice and red kidney beans.  Spoon the salsa over the fillets. Garnish with lime wedges and fresh cilantro.

 

Tip: For extra appeal, add fried plantain as a garnish.
