Caribbean Fish Tacos

Ingredients

  • 6 Upper Crust Caribbean Crusted Basa
  • 180 mL 4 inch corn/flour tortillas
  • 375 mL red & savoy cabbage, shredded
  • 125 mL sour cream
  • to garnish micro sprouts
  • For the Salsa
  • 150 mL mango, diced
  • 50 mL red pepper, diced
  • 10 mL shallots, diced
  • 125 mL avocado, diced
  • 15 mL olive oil
  • 15 mL coriander, chopped
  • 1/2 lime lime juice

Method

  1. Bake Upper Crust Caribbean Basa according to package directions.
  2. Combine salsa ingredients and season with salt and pepper.
  3. Slice cooked Basa into strips.
  4. Assemble tacos with shaved cabbage on the bottom, topped with salsa, followed by sour cream.
  5. Garnish with micro sprouts.
