Caribbean Inspired Fish Wraps

A tropical treat with just a little heat!

Ingredients

  • 6 x 150 g Upper Crust Caribbean Crusted Basa #1029
  • 6 10 inch tortillas
  • 375 mL sliced baby spinach
  • 80 mL mayonnaise
  • 15 mL prepared jerk marinade
  • 15 mL lime juice
  • 1 ripe pineapple
  • 2 avocado

Method

  1. Bake Basa according to package directions.
  2. When cooked, slice into strips and set aside.
  3. Combine mayo, jerk marinade and lime juice.
  4. Peel core and slice pineapple into strips and score on a hot char grill.
  5. Peel and slice avocadoes into wedges.
  6. To assemble, place jerk mayo in the centre of tortilla, top with spinach, avocado, pineapple and strips of Basa.
  7. Fold edges and wrap tight.
