Premium Basa Loins

Chef Philman George Ideas & Inspiration

Basa is getting a lot of buzz lately. It's a fish that is very mild, has a nice soft texture and takes well to whatever sauce/glaze you put on it. Of course, it helps that it's one of the most affordable white fish on the market today.

In addition to our current line up of Basa Fillets, we have expanded our portfolio to include premium cut Basa Loins. They are 4 oz in weight and are approximately 7 inches in length. I took these right out of the box and snapped a photo of them while they were still frozen.

Consistent sizing = consistent cooking! I’m really happy with the overall look and craftsmanship of the Basa Loin, which is visual proof of the High Liner commitment to quality. I was also pleasantly surprised that they did not shrink drastically after they were cooked. Check out the thickness of the Basa Loin.

I love that the thickness is consistent throughout the entire loin. Thicker cuts of fish allow for greater cooking versatility. These loins can be poached/braised with greater ease, but I would still caution against grilling or pan searing. Not that it cannot be done, it would just take a highly trained chef to pull it off as this fish is so delicate. My favourite method of preparation is to oven roast with a complimentary sauce or glaze

Check out this recipe ....Honey Dijon Glazed Basa with Balsamic Mushroom Sauce. Gotta love the upscale plate presentation that was achieved with the help of our new premium cut Basa Loins.

Until next time....stay hungry my friends!
