Piri Piri Haddock

Chef Philman George Tips & Techniques,Ideas & Inspiration

So what exactly is Piri Piri? It’s actually the Swahili name for African bird's eye chili. When this chili found its way to Portugal, it was used to make a sauce which the Portuguese called Piri Piri. This sauce tastes best when paired with poultry or seafood dishes. It gained such popularity that the sauce has also been transformed into a dry spice. The main ingredients are chili peppers, red peppers, citrus peel, garlic, onion, and herbs like oregano and tarragon.

I’m going to be working with our 5 oz Haddock Loin. First I mixed together the panko breadcrumbs, piri piri spice and some fresh chopped parsley.

Then it was just a matter of brushing the fish with a bit of honey on the presentation side, and seasoning both sides. You could also marinate the fish with a bit of piri piri seasoned olive oil. If this is the case, you would not need to brush it with honey. Simply pat the presentation side of the Haddock with the piri piri seasoned bread crumbs and it’s off to the oven.

I’ve paired this with a baby arugula salad that is garnished with avocado, sweet peppers and slivered almonds. A bit of honey lime dressing and this salad is ready to be married with the Piri Piri Haddock.
