"Save money Chef! Find a way to make it happen!" Often times to save money, we are quick to look at things that cost the most on our menus. For example, if you were using Halibut for your fish & chips you may be tempted to look at more affordable options to save money. Here are some things you should consider before making a switch to a more affordable fish.

Customer satisfaction is paramount! It always has been, but in these times it’s even more important. Statistics show that restaurant traffic is expected to either stay flat or grow by only 1% across Canada this year. So now more than ever, the restaurant across the street is going to want your customers in their seats. This tug of war is expected to last through 2020.

Customers want value! Value doesn’t necessarily mean cheap food! A recent customer survey revealed that value included things like atmosphere, service, portion size, but above all TASTE!! Now let’s go back to the Halibut and the need to cut costs and save money on the fish & chips.

THE BIG 3! When it comes to fish & chips in Canada, the top performers are Halibut, Cod & Haddock. These fish rank highest in customer satisfaction. We’ve seen operators that have been under so much pressure to save money that they switched from the big three to a more affordable option like Hake, Pollock, or even Basa for their fish & chips. They definitely saved money, however their fish & chip sales dropped significantly. Their loyal customers noticed the difference.
