I Can't Believe It's Gluten-Free

People who follow a gluten-free diet may be doing so because they have a wheat allergy, celiac disease, or simply making a life style choice. My sister-in-law has a wheat allergy, and when we go out to eat as a family (table of 12) we always choose restaurants that have a variety of gluten-free menu options. One thing that frustrates my sister-in-law is when a separate gluten-free menu is not offered. Instead the server is making suggestions and trying to mix and match different menu items to create a gluten-free meal. Establishments that take this condition seriously, offer a separate gluten-free menu or provide clear labeling on the menu to make their guests with special dietary needs feel more comfortable and welcomed. 

Our new Sea Cuisine™ Gluten-Free Breaded Cod Nuggets are crispy, tasty and gluten-free! Being gluten-free is a major selling point, but when you eat this Cod Nugget you would never know it was gluten-free. It performs like a Breaded Cod Nugget should, crispy on the outside, flaky and moist on the inside! With each Nugget weighing in at roughly 1 oz, they are a great shareable appetizer when combined with some fun dipping sauces. They can also be utilized as a salad topper or combined with corn tortillas to create gluten-free fish tacos. These little Nuggets would also make a perfect fish & chip cone for a fun passed hors d’oeuvres for a special event.

Here are a few of my favourite dipping sauces that work perfectly with our gluten-free Cod Nuggets.  It's all about customization, so try to offer lots of dipping sauces for your customers to choose from. 

Chipotle & lime aioli:

1 cup mayonnaise

2 tsp finely chopped/pureed chipotle peppers

Juice of 1 lime / 2 tbsp of freshly squeezed lime juice

2 garlic cloves minced

Zest of 2 limes

Mix all ingredients together, season to taste with sea salt and chill until ready to serve.

Citrus Aioli:

1 cup mayonnaise

1 ¼ tbsp freshly squeezed lemon juice

1 ¼ tbspfreshly squeezed lime juice

2 garlic cloves minced

Zest of 2 lemons

Zest of 2 limes

Mix all ingredients together, season to taste with sea salt, and chill until ready to serve.

Roasted Garlic & Chive Aioli:

1 cup mayonnaise

2 tbsp roasted garlic chopped fine

2 tbsp fresh chives chopped fine

Mix all ingredients together, season to taste with sea salt, and chill until ready to serve.

Wasabi Cocktail Sauce: Here in North America, wasabi is just wasabi flavoured horseradish. Real wasabi is native to Japan and is difficult to cultivate, thus the high price. Substitute prepared horseradish for wasabi paste & to create a cocktail sauce that bites back.

1 cup ketchup

2 tsp prepared wasabi paste

1 tbsp light soy sauce

2 tsp lemon juice

Mix all ingredients together and chill until ready to serve.
