Patio season can be challenging on the kitchen. All of a sudden you have increased your seating capacity, without increasing the kitchen space. Menu additions need to be kept as simple as possible for ease of execution. A good way to do this is to increase your seafood offerings. Seafood is light on the stomach and cooks extremely fast, making it a win for the customer and the kitchen staff. Check out this Sweet Sesame Soy Grilled Salmon Bowl. Minimum ingredients, bold flavour, and easy to execute!
To elevate you gotta marinate! Call this process out on your menu. When customers see the word “marinated" it signifies that TLC has been applied to reach a higher state of taste. This marinade uses only 4 ingredients so it is important that each of the ingredients are of the highest quality. Try creating your own low sodium soy sauce, by diluting dark soy sauce with water vs buying a low sodium soy sauce. Dark soy sauce has incredible flavour!
I recommend marinating for a minimum of 30 minutes, but overnight will give you the maximum flavour penetration. Aspire to use a suitable insert. The above picture is an example of an insert that is not suitable. The salmon on the bottom is soaking up more of the marinade than the salmon on the top. This is a small adjustment that can make a huge impact.
Apply the TLC all the way to the finish line! Your char grill needs to be hot, clean and oiled before the Salmon goes on the grill. The honey in the marinade is going to caramelize on the hot grill creating outstanding flavour and nice deep grill marks. Real estate on the grill is usually at a premium! It’s only necessary to grill the presentation side.Transfer to an oven pan, baste it and finish in the oven.
The Jasmine rice can be holding in the rice cooker or in the steam table. The edamame should be mixed in to order so that it remains as vibrant green as possible. Once you nestle the Salmon on top of the rice, pour any remaining pan juices over the entire dish. Recipe can be found here.
