Blackened Togarashi Haddock

Chef Philman George Ideas & Inspiration

Here’s a simple and on-trend dish that’s perfect for summertime menus— Blackened Togarashi Haddock with Black Rice Noodle Salad!

So what exactly is Togarashi?

Shichimi Togarashi is a blend of spices that is very popular in Japan. It consists of seven main ingredients: chili pepper, citrus peel, nori seaweed, black sesame seeds, poppy seeds, garlic, and black peppercorns. It’s the perfect spice blend for seafood because it packs a good balance of heat and umami. It works amazing as a blackening spice with our 4 oz. haddock loin!

I used a black rice noodle for my base, but you can also use soba noodle or vermicelli.

For the dressing, I made a simple asian dressing using 1/2 cup sesame oil, 1/4 cup seasoned rice wine vinegar, 1/3 cup soy sauce and 1 tbsp. oyster sauce.

To plate, simply toss the noodles with the dressing and garnish with shredded carrots and green onions. You can also take it up a notch by garnishing with edamame, cucumbers, bell peppers, avocado and pickled ginger!

And just like that, you’re done. Don’t wait too long to start using this trending spice blend, it’ll stand out on your menu and intrigue curious millennials looking to try new things.
