Mini Crispy Haddock Sammies with Chili Papaya Slaw

Here’s a simple and unique sharable creation geared towards millennials. It features our 3 oz. beer battered haddock, which comes pre-prepped in a delicious light and crispy batter. All you have to do is remove it from the box and place it in the deep fryer or oven.

 

 

The slaw is inspired by Laos, a country that borders Thailand and Vietnam. It’s a combination of green papaya, tomatoes, fresh chili peppers, fish sauce, lime juice, brown sugar and shrimp paste.  The shrimp paste is what gives it that hit of umami and takes the slaw to the next level. 

 

 

To serve, I used a bit of garlic butter to toast the soft brioche slider buns and cut the 3 oz. haddock fillets in half to fit. Then I placed a generous amount of ginger aioli on the bottom bun and piled on the slaw. Don’t be shy with the slaw: stack it high!

 

And there you have it. A simple yet unique dish that’s shareable and perfect for millennials.
