Almond Crusted Sole Bites

Our chefs put together a simple way to serve fish as an appetizer that delivers amazing flavor, a perfect amount of texture and is very easy to prepare. In this recipe, our culinary team used Premium wild caught Sole, from our Upper Crust™ portfolio. The Upper Crust line features a variety of fish, with different craveable, crispy coatings.  We call it “Upper Crust” because only the top of the fish is coated.  This allows for a wider range of applications, from holding in the steam table to a la carte service. 

Almond Crusted Sole Bites

Deep fry one fillet portion from frozen in under 7 minutes. While deep frying, mix mayonnaise, dill pickles, capers, Dijon mustard, parsley, lime juice and wasabi paste. Cut fish into 1-inch slices and serve on a spoon. Top each with your Wasabi Tartar mix and a clipping of fresh dill and enjoy!
