To amplify the protein, serve the fish on a creamy cannellini bean purée made with Italian white kidney beans. If you don’t have any, sub with navy beans. Frozen Sea Cuisine Mediterranean Glazed Haddock Portions (Product code 8975)

Breadcrumbs

750 ml

½ cup

Parmesan cheese, grated

125 ml

3 tbsp

Italian seasoning

45 ml

¼ cup

Olive oil

4 x 28 oz cans

Cannellini beans or Italian white kidney beans

4 x 796 ml cans

4 cloves

Fresh garlic, minced

4 cloves

Method:

  1. Combine breadcrumbs, Parmesan cheese, Italian seasoning and olive oil in bowl.
  2. Place frozen Sea Cuisine Mediterranean Glazed Haddock Portions on oven trays and top each portion with the seasoned breadcrumb mixture.
  3. Bake in preheated oven according to package instructions.
  4. For the cannellini bean purée, blend beans, garlic, vegetable oil and lemon juice in a food processor until smooth.
  5. Place bean purée under or beside the baked haddock. Serve with a side of vegetables or salad.
