Crunchy, Creamy Mediterranean Haddock Coperto Seafood Recipe

To amplify the protein, serve the fish on a creamy cannellini bean purée made with Italian white kidney beans. If you don’t have any, sub with navy beans. Method:
- Combine breadcrumbs, Parmesan cheese, Italian seasoning and olive oil in bowl.
- Place frozen Sea Cuisine™ Mediterranean Glazed Haddock Portions on oven trays and top each portion with the seasoned breadcrumb mixture.
- Bake in preheated oven according to package instructions.
- For the cannellini bean purée, blend beans, garlic, vegetable oil and lemon juice in a food processor until smooth.
- Place bean purée under or beside the baked haddock. Serve with a side of vegetables or salad.
