Ingredients:

1 x 4 – 5 oz frozen Fire RoastersTM Smokey Applewood Salmon Fillet (Product Code 8955)

250 ml liquid eggs

2 tbsp cream

1 cup baby spinach

1/2 cup red pepper, diced

1/2 cup green pepper, diced

¼ cup red onion, diced

1 tbsp extra virgin olive oil

Salt and pepper to taste

Method:

  1. In a 6” skillet heat olive oil over medium heat. Sauté peppers and red onion until tender. Right at the end, add baby spinach to wilt. Transfer vegetable mixture to two individual-sized ceramic baking dishes.
  2. Using a sharp cleaver or large chef’s knife, slice the frozen Fire RoastersTM Smokey Applewood Salmon Fillet into 1/4 inch thick strips. Add half a portion to each baking dish.
  3. Whisk cream into liquid eggs and season to taste. Slowly pour 125 ml of seasoned liquid eggs into each dish.
  4. Bake in a 375°F convection oven for 12 to 15 minutes.

Serves 2 (with 1 salmon fillet).
