Irish Poutine with Haddie Bites

Irish Poutine

Growing up and living in the Outaouais, I’m fortunate to be surrounded by hidden gems like micro brasseries, maple syrup producers, and award-winning cheese producers. When I sit down and read some of my local bistro menus, I can't help but think about all the creativity that went into those recipes using our local treasures.

That's when some of that culinary creativity kicked in and the Irish Poutine with Haddie Bites came to life using all three ingredients:

beer, maple syrup, and cheese! It's simplicity, local ingredients, and versatility, all in one recipe.

Ingredients

(4 portions)

 

Haddie Bites

600g French fries ovenable or fryer

12 Haddie Bites High Liner code 4590

55g poutine sauce mix

120g cheese curds (room temperature)

or shredded mozzarella

15ml green oinion, finely sliced

500ml Guinness Beer or local dark beer

15ml bacon jam (see attached recipe)

 

Bacon Jam

30 slices of bacon, diced

4 medium Spanish onions, diced

2 cups of brown sugar

1 cup of maple syrup

1 cup of Guinness beer

100ml cider vinegar

 

Preparation

  1. Cook Haddie Bites according to package instructions
  2. In a sauce pan, whisk the poutine sauce mix with the Guinness Beer, simmer until consistency is thick and smooth
  3. Cook French fries according to package instructions
  4. Place cooked fries in a bowl, add cheese curds, cooked Haddie Bites, and cover with the hot poutine sauce
  5. Garnish with bacon jam and green onions

 

Bacon Jam

  1. Cook bacon until crispy (put aside)
  2. Caramelize the onions with a bit of the bacon fat, add the cook diced bacon, brown sugar, cider vinegar, and Guinness beer, let reduce
  3. Add the maple syrup and simmer for 10 minutes
  4. Let it cool then refrigerate
